10 steps: How to make Swedish Cinamon Rolls (Kanelbullar)


Hi there! Today I'm having a very lazy Monday I wanted to share this recipe of cinnamon rolls that I've been loving for the past months. 
The famous cinnamon rolls are apparently originary from Sweden and they quickly became my favorite food. I know it's not really healthy to eat kanebullar everyday but they are so delicious and the ingredients are so easy to find that I often find myself baking them just for fun.

Hola! hoy es uno de esos lunes llenos de fiaca y quería compartir con ustedes la receta de los rollos de canela suecos de los que estuve disfrutando los últimos meses.
Los famosos cinnamon rolls aparentemente son originarios de Suecia y rápidamente se convirtieron en mi comida favorita. Sé que no es nada saludable comer kanelbullar todos los días pero son extremadamente ricos y los ingredientes son bastante fáciles de encontrar en cualquier súper.


Ingredients (aprox 15-20 kanelbullar)

-for the dough / para la masa
445 grams of all purpose flour / 444 gramos de harina 0000
1/4 tsp salt / 1/4 cucharadita de sal
70 grams of sugar / 70 gramos de azucar
25 grams of fresh yeast or 1 3/4 tsp dry yeast / 25 gramos de levadura fresca
250 ml milk / 250 ml de leche
80 grams of butter / 80 gramos de manteca

-for the filling / para el relleno
-80 grams of room temperature butter / 80 gramos de manteca a punto pomada
5 tbsp sugar / 5 cucharadas de azucar
3 tbsp cinnamon powder / 3 cucharadas de canela en polvo

-extras (decoration)
nib sugar / azucar cande/perla
1 beaten egg / 1 huevo batido


 The dough
1. Heat the butter until it melts (approx. 30 seconds in the microwave). 2. Place the melted butter into a pan and pour the milk. Heat the liquids together until they are as warm as your finger (37°C). Do not over heat the liquids otherwise they will ruin the yeast.

La masa
1. Calentá la manteca hasta que se derrita completamente (aprox. 30 segundos en el microondas). 2. Poné la manteca derretida en una cacerola y agregá la leche. Calentá ambos líquidos en la hornalla hasta que éstos estén a la misma temperatura que tu dedo (37°C). Es importante no sobrecalentar la mezcla ya que esto arruinaría la levadura. 


3. Mix all the solid ingredients together (salt, flour, sugar and yeast) and make a whole in the center. 4. Pour the fingerwarm milk and butter mix.

3. Mezclá todos los ingredientes sólidos (sal, harina, azucar y levadura) y forma un hueco en el centro. Agregá la leche tibia y la manteca de una sola vez.


4. Mix everything. You will notice that the dough is very sticky therefore I recommend to add more flour and keep kneading until it looks smooth like in the picture above.
5. Place the dough into a bowl, cover it with a cloth and let it rise for 90 minutes.

4. Mezclá todo. Vas a notar que la masa es bastante pegajosa y por eso recomiendo agregar más harina y continuar amasando hasta que la masa se vea como en la foto.
5. Pone la masa en un bowl grande, cubrila con un repasador y dejala levar por 90 minutos.


Meanwhile you could start preparing the filling. You only have to place the room temperature butter, the cinnamon powder and the sugar in a bowl and mix them all together. It should look like a brown paste.

Mientras tanto podés preparar el relleno. Solamente tenés que poner en un bowl la manteca a punto pomada (temperatura ambiente), la canela en polvo y el azúcar y mezclarlos hasta tener una pasta marrón.


6. Once the dough has rised for 90 minutes knead it a little bit more and roll it until you have something like 40 cm x 30 cm rectangle. 7. Spread the filling. If you're filling wasn't enough for the whole rectangle then make a little bit more ;).

6. Una vez que la masa levó por 90 minutos amasala un poco más y estirala hasta formar un rectángulo de aprox. 40x30 cms. 7. Esparcí el relleno, si no alcanzó para todo el rectángulo prepará un poco más ;).


8. Roll the dough and cut it in 2 cms pieces each. 9. Place the rolls into muffins paper cups or simply over baking paper, cover them with a cloth and let them rise for another 45 minutes.

8. Enrollá la masa y corta rollitos de 2 cms de ancho. 9. Poné los rollos en pirotines de muffins o simplemente sobre una hoja de papel de hornear. Poné un repasador sobre ellos y dejalos levar por 45 minutos.


10. Now that they look big, take your beaten egg and wash the rolls (this will make them look shinny). Sprinkle nib sugar all over them and cook them in the oven at 225°C-250°C for 13-14 minutes.

10. Después de que pasaron los últimos 45 minutos, tomá el huevo batido y pintá los rollos (esto hace que se ven brillosos al ser cocinarse) después espolvoreá el azúcar perla (o el azúcar que tengas) y meté los rollos en el horno a 225°C-250°C por 13-15 minutos o hasta que estén dorados.



Oh Kanelbullar... I can't get enough of you. I always eat them with fresh milk right after I take them out of the oven even if they are a bit too warm, they are delicious!

Me encanta comerlas ni bien las saco del horno acompañadas con un vaso de leche fría, oh dios!

  12. AH <3 comida <3 jaja nunca probé cinamon rolls, pero los veo en muchas fotos de sitios de comida (foodporn) y los quiero probar yayayayayayayaya. El único problemita es que no estoy segura de que me guste la canela... queda muy intenso el sabor? quizás podría probar hacerlos con un poco menos de canela, al menos la primera vez. Y se me ocurre que se podría hacer con otros rellenos... por ejemplo con cacao en polvo <3
    Bueno, ya quiero probar jaja me encantó la receta! gracias por compartirla!
